In 2010, at a time when I was running a previous restaurant, Souk In The City in Sydney's Surry Hills, I spoke to Pauline Webber from the Australian newspaper. Our Mosman restaurant was called Afous for many reasons. Afous is a Berber name from my Mum and Dad's tribe in Morocco which means Hand. This is why the restaurant was called Afous:
1. Respect to my Dad and Mum for their heritage
2. In the Hand we have the fingers and each finger represents one of the five senses.
